When people return to campus in fall 2027, they will find even more dining options in newly renovated space at the Iowa Memorial Union. The following vendors are scheduled to open in the IMU in fall 2027:

• FujiSan Sushi
• Godfather’s Pizza
• Panda Express
• Potbelly Sandwich Shop
• River Front Café

The new vendors, which were selected based on student feedback, will provide students with more dining variety and convenient food options throughout the day. Each of the new vendors will accept dining dollars, U-Bill charges, and credit card.

Located on the First Floor will be FujiSan Sushi, Godfather’s Pizza, Panda Express, and River Front Café. Godfather’s will be in the southeast corner connected to new student lounge space that includes a front porch and veranda.

FujiSan offers freshly made sushi hand rolled daily and boba tea. Godfather’s Pizza serves pizza made with real cheese and fresh toppings. Panda Express offers Chinese-inspired dishes. The River Front Café, a new concept developed in partnership with University Housing and Dining, will feature hand-breaded chicken tenders and made-to-order pasta.

Potbelly Sandwich Shop will be located on the Ground Floor serving sandwiches, soups, salads, and desserts.

Renovation work at the IMU began in spring 2025 and is expected to be completed in fall 2027. In addition to expanded dining options, the project includes a new student well-being center, improved wayfinding, and building updates designed to enhance the student experience.
